Zucchini Bread

Makes 2 loaves

2 cups sugar
1 cup oil
3 eggs
2 cups shredded zucchini
1 teaspoon vanilla
3 cups flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
1 cup chopped walnuts (optional)

Mix together: sugar, oil, eggs, zucchini, and vanilla. Sift together flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves, then add to mix. Add walnuts if desired. Bake in 2 loaf pans or bundt pan 1 hour at 325F.
