Rice Veracruz

Serves 6

1 pound ground chuck
1 cup chopped onions
1 cup diced green peppers
16 ounce can whole tomatoes and liquid
1 can beef consomme
2 teaspoons chili powder
1 teaspoon salt
1 cup sliced black olives
1 cup uncooked long grain white rice

Saute beef, onions and peppers until tender; drain. Break tomatoes into smaller pieces. Mix tomatoes, liquid, consomme, chili powder, salt and black olives. Add to beef, onion and pepper mix. Bring to boil and stir in rice. Cook 5 minutes. Put mixture into casserole dish. Cover and bake at 375 degrees for 30 minutes. Uncover. Top with shredded cheese and bake for 15 minutes.
