Cottage Cheese Loaf

Approximately 8 - 10 servings
Ingredients:
6 egg whites (or 5 eggs)
1 pint lofat cottage cheese
1/2 box Special K cereal or a little more
1 green pepper - chopped
1 onion - chopped
Procedure:
preparation time: 10 minutes, bake time: 45 minutes.
Mix together eggs, cottage cheese, green pepper, and onion. Add enough Special K cereal so that the mixture is not runny or gooey. The 1/2 box is an approximation. Put in a 9x11 greased pan, and sort of pat it all down so it's uniform. Bake at 350 for 45 minutes.
Notes: this recipe may be varied alot in taste by adding different spices and/or nuts. These are all optional, but fun to experiment with. Some I have tried are:
