Chocolate Chip Date Nut Cake

Makes a 9 x 13 cake.

Ingredients:
6 ounces chopped dates
1/2 teaspoon salt (optional)
1 cup hot water
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
1 cup liquid shortening
1 3/4 cups flour
1 1/4 cup sugar
2 tablespoons cocoa
6 ounces (1 cup) chocolate chips
1/2 cup chopped walnuts

Procedure:
Preheat oven to 350 degrees. In a seperate bowl, pour hot water over dates and soda, let cool. Mix shortening, eggs, and 1 cup of sugar in mixer until well blended and smooth. Add vanilla and date mixture. Mix well. (be careful when adding date mixture to mixing bowl, it's somewhat runny and will splatter!). Sift flour, salt and cocoa and add to mixture. Mix well. Pour into 9 x 13 greased pan.

Prepare the topping: Mix together in a bowl, and sprinkle over the cake batter before baking: 1/2 cup chopped walnuts, 6 ounces (1 cup) chocolate chips and the remaining 1/4 cup of sugar.

Bake in a 350 degree oven for 45 minutes. Toothpick will come clean when done. That is if you don't go through a chocolate chip !! Very good, Quick and easy. No messy frosting. Moist cake.
