Baked Chop Suey

Serves 4 - 6

1 pound cubed lean pork
1 pound cubed lean beef
3 tablespoons butter
2 teaspoons salt
1/2 teaspoon pepper
1/2 cup uncooked rice
1 - 1 1/2 cup carrots
1 - 1 1/2 cup celery
1 onion
4 cups cold water
1 tablespoon soy sauce
2 tablespoons bead molasses

Sear the meat in fat or oil in a frying pan. Put it in a baking dish (I favor the enameled metal ones) and add the rest of the ingredients and bake uncovered for 2 hours at 350 degrees, stirring once after an hour.

Notes: Chop the celery into larger chunks than you'd use for tuna fish salad and slice the carrots about 1/4 inch thick or less, to allow them to cook all the way through. Cut the water to 7 cups if doubling the recipe.
